Ingredients:
– 1 lb. (450g) whole wheat spaghetti
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, chopped
– 1 green bell pepper, chopped
– 1 zucchini, chopped
– 8 oz. (225g) mushrooms, sliced
– 1 can (28 oz./ 800g) crushed tomatoes
– 1 can (6 oz./ 170g) tomato paste
– 2 tbsp. olive oil
– 2 tsp. dried oregano
– 2 tsp. dried basil
– Salt and pepper to taste
– Parmesan cheese or nutritional yeast for garnish

Instructions:

1. Cook the whole wheat spaghetti according to package instructions.
2. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic and cook for 2-3 minutes until fragrant.
3. Add the red and green bell peppers, zucchini, and mushrooms. Cook for another 5-7 minutes until the vegetables are tender.
