– 1 cup raw cashews, soaked in water for at least 2 hours
– 1/2 cup nutritional yeast
– 2 tbsp white miso paste
– 1 tbsp Dijon mustard
– 1 tbsp apple cider vinegar
– 2 cloves garlic, minced
– 1 tsp onion powder
– 1 tsp smoked paprika
– 1 tsp salt
– 3 cups water
– 1/4 cup vegan butter
– 1/4 cup all-purpose flour
– 1 cup unsweetened almond milk
– 1 cup vegetable broth
– 1 cup vegan cheddar cheese shreds
– 1/2 cup panko bread crumbs
– 2 tbsp olive oil
Instructions:
1. Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish and set aside.
2. Cook the macaroni according to package instructions until al dente. Drain and set aside.
3. In a blender or food processor, combine the soaked cashews, nutritional yeast, miso paste, Dijon mustard, apple cider vinegar, garlic, onion powder, smoked paprika, salt, and water. Blend until smooth and creamy.
4. In a large saucepan, melt the vegan butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, until the mixture is golden brown.
5. Slowly pour in the almond milk and vegetable broth, whisking constantly, until the mixture is smooth. Add the cashew cheese mixture and continue to whisk until the mixture thickens, about 5-7 minutes.
6. Add the vegan cheddar cheese shreds to the sauce and stir until the cheese is melted and the mixture is smooth.
7. Add the cooked macaroni to the cheese sauce and stir until the macaroni is evenly coated.
8. In a small bowl, mix together the panko bread crumbs and olive oil. Sprinkle the mixture evenly over the top of the macaroni and cheese.
9. Bake for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.
10. Remove from the oven and let cool for a few minutes before serving. Enjoy!
